Pasta Salad. It might be the best kept secret of dinners on the fly. Who doesn’t have some sort of pasta in their pantry? And who doesn’t have a plethora of veggies that need to be used up? And who doesn’t really want to put that much effort into dinner?
This dinner has a million modifications. But the general idea is super simple
Base: Pasta. Of any shape or size.
Add ins: Veggies. pictured roasted asparagus, tomatoes, cucumbers, and black olives. parmesan cheese shavings, cubed cheese. You can also add pepperoni, peppers, mushrooms, arugula, spinach, cubed ham, leftover chicken – Seriously – anything.
Dressing: Italian But you could probably use whatever you fancy. Oh, and salt and pepper too.
