Breakfast Cookies

Happy Spring!

Spring Break is coming to an end here, and its sadness at our house.  We opted to stay home and get some projects done around the house.  I can’t wait to share with you pics of the finished project…as soon as I finish.

Breakfast is one of my absolute favorite meals and there are soooo many options.  It never has to be boring.  If you have a kid who doesn’t like to do breakfast – try these breakfast cookies.  I can’t stand the thought of kids fueling up for the day with a bowl full of sugar.  Friends don’t let friends feed their kids bowls of sugar for breakfast.  I love you.  That’s why I’m sharing this with you.  Its super easy and you can make a batch up on Sunday night and have them ready for the week!

Here we go

1 cup applesauce or 2 bananas mashed
1/2 cup nut butter (I use almond butter)
1 cup rolled oats
dash of vanilla
1/4 cup craisins (optional)
1-2 Tbsp mini chocolate chips (optional)
1/4 cup nuts of your choice (optional)

Mix together the applesauce or bananas with the nut butter until well combined.  Add the rest of the ingredients and mix it well.  If you have a scoop, scoop onto a greased cookie sheet.  If you don’t have a scoop a spoon will work.  Make them small, make them large, so versatile!  Bake at 350 degrees for 15 minutes.

This just might help you get to the end of the school year.  And it’s not proven but I think your kids grades will improve when given these to eat before school.
